Chapter 3 | Skylark Distillery

Last time we explained how the original Lantic Gin came about through foraging. Now we’ll talk about the distillery in which we craft it.

Lantic Gin is our original expression, named after the bay in which many of the botanicals it features are found. 

But Skylark distillery, the place in which Lantic Gin is made, sits above that, and I often have questions about how it came about.

The truth is very simple. It was inspired by one of my earliest memories of summer. When walking along coastal paths with my parents, we listened to the birdsong of skylarks.

It is now the soundtrack to many a foraging expedition and evokes an emotional connection. It makes me feel so grateful to be able to live and work here by the coast.

Today, Skylark distillery is the transformed ground floor of my barn, in which I spend many hours crafting the gin you are hopefully enjoying now.
