We use the traditional one shot distillation method which involves a mix of juniper and other botanicals distilled with a high quality English grain spirit.
We heat our copper pot stills 'Virginia' and 'Margaret', let the ‘base’ botanicals soak overnight to help extract the oils. In the morning, we add our local floraged botanicals which are normally more delicate. We heat the stills slowly for distilling. It's delicate and needs careful distillation to make sure we only collect the best flavours and aromas from our unique botanicals.
We gather the best part of the gin and discard the unwanted oils and heavier substances to keep the precious gin. The distillate is then slowly diluted with Cornish spring water to our bottling strength. This creates a flavorful gin known as ‘Cornish Dry Gin’.
